Simple Pickled Watermelon Rinds
Summer is the season of watermelon! This quick recipe shows that even the rind can be a wonderfully tasty treat to enjoy, even as summer comes to a close.

- 1 lbs watermelon rind green skin peeled off
- 1 cup water
- 1 cup apple cider vinegar
- 1 cup sugar
- 1 tbsp pickling salt
- 1 tsp ground cinnamon, cloves, allspice, or any combination optional
Carefully remove the green skin of the watermelon. And remove the flesh, retaining the rind. Cut the rind into spears.
In a pot of boiling water and salt, soften the rind depending on preference, up to 4 minutes. Once softened, strain the rind and allow to cool.
While the rind is cooling, place the water, vinegar, pickling salt, sugar, and other spices into the same pot and heat until the salt and sugar have dissolved and everything is incorporated.
Place your rind in your storage jar(s). Pour enough of the pickling liquid to cover the rinds, leaving at least an inch of room from the top. Store in the refrigerator for up to 2 weeks.
